Skunk cabbage (also called swamp lantern), is native to swampy wet meadows and forests of the North American Pacific Coast. It is in the Araceae family, and like its central North American cousin, Symplocarpus foetidus, it has a fleshy rhizome, consisting mainly of the stem tissue. The skunk smell attracts insects that pollinate the tiny flowers packed on a central spike that is hooded by a large yellow bract. Unlike its central North American cousin that was used, and continues to be used, extensively for respiratory problems, the Pacific Northwest skunk cabbage was rarely used for food or medicine because it contains needle-like crystals of calcium oxalate that can cause intense irritation and burning in the digestive tract. Instead, Pacific Northwest skunk cabbage leaves were used to line berry picking baskets, drying racks, and cooking pits. However, after steaming or roasting, leaves and roots were sometimes eaten as a famine food.
